Delicious country apple cakes that is easy to prepare and gluten free


 Country Apple Cakes (18cm / 7 inches cake)
Country Apple Cakes Ingredients:
  • 115g / 4oz / 1/2 cup margarine
  • 115g/4oz/1/2 cup light soft brown sugar
  • 2 eggs beaten
  • 115g/4oz/1 cup gluten-free self raising flour sifted
  • 50g/2oz/1/2 cup rice flour
  • 5ml/1 tsp gluten free baking powder
  • 10ml/2tsp mixed spice
  • 1 medium cooking apple, peeled, cored and chopped
  • 115g/4oz/2/3 cup raisins
  • 60ml/4tbsp semi skimmed milk
  • 15g/1/2 oz/2 tbsp flaked almond
  • custard or ice cream to serve (optional)

Country Apple Cakes

1. Preheat oven to 160°C/325°F/Gas 3.  Lightly grease and line a deep 18cm/7in round, loose bottomed cake tin.

2. Place the margarine and sugar in a bowl and cream together until pale and fluffy.  Gradually add the eggs, beating well after each addition. Fold in the flour, rice flour, baking powder and mixed spice and mix well.

3. Fold in the chopped apple, raisins and enough milk to make a soft dropping consistency.

4. Turn the mixture into the prepared tin and level the surface. Sprinkle the flaked almonds over the top. Bake for 1-1 1/4 hours until risen, firm to the touch and golden brown.

5. Cool in the tin for about 10 minutes then turn out on to a wire rack to cool. Cut into slices when cold. Alternatively, serve warm, in slices, with custard or ice cream.  Store the cold cake in an airtight container or wrapped in foil.
