Delicious chocolate chip cookies that is easy to prepare and gluten free


 Cherry Coconut Munchies (20 munchies)
Cherry Coconut Munchies Ingredients:
  • 2 egg whites
  • 115g / 4oz / 1 cup icing sugar, sifted
  • 115g/4 oz/1 cup ground almonds
  • 115g/4oz/generous 1 cup desiccated coconut.
  • few drops of almond essence
  • 75g/3oz/1/3 cup glace cherries finely chopped

 Cherry Coconut Munchies

1. Preheat oven to 150°C/300°F/Gas 2.  Line 2 baking sheets with non-stick baking powder.  Place the egg whites in a bowl and whisk until stiff

2. Fold the icing sugar, then fold in the ground almonds, coconut and almond essence to form a thick dough.  Fold in chopped cherries.

3. Place heaped teaspoonful of the mixture on the prepared baking sheets.  Bake for 25 minutes until pale golden.  Cool on the baking sheets for a few minutes, then transfer to a wire rack until cold.  Store in air tight container for up to a week.
