Delicious chocolate chip cookies that is easy to prepare and gluten free


 Chocolate Chip Cookies (16 cookies)
Chocolate Chip Cookies Ingredients:
  • 75g / 3oz / 6 tbsp soft margarine
  • 50g/2oz/1/4 cup light soft brown sugar
  • 50g / 2 oz / 1/4 cup caster sugar
  • 1 egg beaten
  • few drops of vanilla essense
  • 75g/3oz/3/4 cup rice flour
  • 75g/3oz/3/4 cup gluten-free cornmeal
  • 5ml/1 tsp gluten free baking powder
  • pinch of salt
  • 115g/4oz/2/3 cup plain chocolate chips or a mixture of milk and white chocolate chip.

Chocolate Chip Cookies

1. Preheat oven to 190°C/375°F/Gas 5.  Lightly grease 2 baking sheets.  Place the margarine and sugars in a bowl and cream together until light and fluffy.

2. Beat in the egg and vanilla essence.  Fold in the rice flour, cornmeal, baking powder and salt, then fold in the chocolate chip.

3. Place spoonful of the mixture on the prepared baking sheets, leaving space for spreading between each one.  Bake for 10-15 minutes until the cookies are lightly browned.

4. Remove the cookies from the oven and leave to cool for a few minutes, then transfer to a wire rack and leave to cool completely before serving the chocolate chip cookies.
