Chargrilled Salmon Stakes with Mango Salsa 1. Make the mango salsa. Peel and stone the mango, finely chop the flesh and place in a bowl. Peel, seed and finely chop the cucumber, chop the spring onions. Add to the mango with coriander and salt and pepper. Mix, cover and leave for 30 minutes. 2. While the salsa is standing to allow the flavors to mingle, preheat a barbecue grill. Place the salmon steak on a ridged grill pan, drizzle over the lemon or lime juice and cook for about 6 minutes on each side until the steak are tender and just beginning to flake. 3. Transfer the salmon to serving plates, spoon some mango salsa alongside each steak and serve immediately, garnished with coriander sprigs and lemon salsa. |
