Delicious fruit salad that is easy to prepare and gluten free


A refreshingly tangy combination - rocket and lamb's lettuce leaves are topped with fresh grapefruit, oranges and avocado in a light, fruity dressing

 Fruit Salad (4 servings)
 Fruit Salad Ingredients
  • 1 pink grapefruit
  • 2 oranges
  • 1 avocado
  • 50 g / 2oz / 1/2 cup pine nuts
  • 25 ml / 1 1/2 tbsp olive oil
  • 10 ml / 2 tsp balsamic vinegar
  • 30 ml / 2 tbsp freshly squeezed orange juice
  • 50g / 2 oz lamb's lettuce
  • 50g/ 2oz rocket
  • salt and ground black pepper
  • fresh herb sprigs to garnish

 Fruit Salad Preparation Method

1. To prepare fruit salad, first halve and segment the grapefruit and oranges and place the segments in a mixing bowl.  Squeeze any juices into the bowl, if liked.

2. Peel and slice the avocado and add the slices to the bowl

3. Gently stir in the pine nuts, taking care not to break up the avocado

4. Whisk together the olive oil, vinegar, orange juice and seasoning in a small bowl or jug and stir into the fruit mixture.  Arrange the lamb's lettuce and rocket on four serving plates and spoon a little fruit and dressing over each.  Garnish with herbs and spices, and serve the fruit salad immediately
