Delicious greek salad that is easy to prepare and gluten free


Use soya-based alternative to feta cheese if preferred

 Greek Salad (6 servings)
Greek Salad Ingredients
  • 1 small cos lettuce, sliced
  • 450g / 1 lb tomatoes, cut into eights
  • 1 cucumbers, seeded and chopped
  • 200g/7 oz feta cheese, curmbled
  • 4 spring onions sliced
  • 50g/2 oz/ 1/2 cup black olives pitted and halved

Dressing

  • 90ml / 6 tbsp extra virgin olive oil
  • 25 ml / 1 1/2 tbsp lemon juice
  • salt and ground black pepper

 Greek Salad Preparation Method

1. To prepare greek salad, put tomatoes, cucumber, feta cheese, spring onions, and olive into a large bowl.

2. To make the dressing, whisk together the olive oil and lemon juice, then season with salt and pepper.

3. Pour the dressing over the salad.  Toss gently until the ingredients are lightly coated in the dressing then serve immediately.
