Delicious seafood salad that is easy to prepare and gluten free


This is a simple seafood salad recipe that is quick and easy to prepared.  It makes a great lunchtime snack.  Serve with baked potatoes for a more satisfying meal.

 Seafood Salad (4 servings)
Seafood Salad Ingredients
  • 30 ml / 2 tbsp olive oil
  • 15 ml / 1 tbsp flavored oil, such as basil oil or chili oil
  • finely grated rind of 1 small lemon
  • 15 ml / 1 tbsp lemon juice
  • 1 garlic clove, crushed
  • 30 ml / 2 tbsp chopped fresh basil
  • 175g / 6 oz mixed salad leaves
  • 115g / 4 oz sugar snap peas, chopped
  • 400g / 14 oz packet frozen seafood mix defrost and drained
  • salt and pepper to taste

 Seafood Salad Preparation Method

1. To prepare seafood salad, place 15 ml / 1 tbsp of the olive oil, flavored oil, grated lemon rind, lemon juice, garlic, and basil in a small bowl or jug.  Season with salt and pepper to taste and whisk together until thoroughly mixed.  Set aside.

2. Place the salad leaves and sugar snap peas in a serving bowl and toss lightly to mix.

3. Heat the remaining olive oil in a large frying pan or wok, add the seafood and stir-fry over a medium heat for about 5 minutes until cooked.  Scatter the seafood over the salad leaves, drizzle the dressing over the salad, toss together to mix and serve.
